Identify laws and regulations supporting health, safety, and nutrition in early childhood settings. 3. Identify health and safety risks in early childhood settings. 4. Describe a caregiver’s role and responsibility in modeling good health, safety, and nutrition habits. 5. Plan economical and nutritious meals and snacks based on the age and individual needs of children. 6. Plan learning experiences on the topics of health, safety, and nutrition. Read professional periodicals and other research-based sources and write recommendations for parents on ways to improve a child's diet in terms of calories, carbohydrates, protein, vitamins and minerals. 2. Read professional periodicals and/or internet sources on a variety of health and safety issues related to infants' and young children's experiences in child care settings. Be prepared to discuss Health and Safety issues and experiences. Writing, Problem Solving or Performance 1. Read professional periodicals and other research-based sources and write recommendations for parents on ways to improve a child's diet in terms of calories, carbohydrates, protein, vitamins and minerals. 2. Read professional periodicals and/or internet sources on a variety of health and safety issues related to infants' and young children's experiences in child care settings. Be prepared to discuss Health and Safety issues and experiences. Other (Term projects, research papers, portfolios, etc.) 1. Project: Students will be given a list of symptoms of an infectious disease and will develop a plan on how they would manage the disease, precautions they would take in communicating the outbreak to staff and families enrolled in the child care program, and determine if they would be required to report the incidence of the disease to the local social services department. 2. Develop a nutrition lesson plan for healthful eating for preschool children. The Human Development and Family degree program provides students with the necessary education for work in child development programs at various levels: assistant teacher, associate teacher, teacher, master teacher, site supervisor and director. It also includes instruction in infant care, preschool, school-age care, and children’s advocacy. Course work prepares students who wish to go into the field of teaching, as well as work with families and social services.
